What are fat tail sheep?
Fat tail sheep are a unique group of sheep breeds known for storing fat on their rump and tail. This tail fat serves as an energy reserve. These sheep are well-suited for various climates and are valued for their meat, wool, and milk production. There are 3 main shapes to the fat deposition: right on the rump and upper part of the tail, along the sides of the tail in a long V shape, and a square or rectangular shape along the top portion of the tail.
Why is the fat tail so special?
The tail fat has different properties than body fat. When rendered, the tail fat has a lower melting point than body fat. When used in cooking, the eating experience is excellent with no fatty mouth coating sometimes experienced with other breeds.

The market demand for fat tail sheep is huge. Fat tail breeds comprise more than half of the sheep breeds in the world. They hold a cultural significance for a lot of people. We are raising awareness of this opportunity for producers and connecting them with eager buyers. We aim to establish a viable composite breed that meets both producer and buyer goals. Our primary market and producer base is in Texas, but we are willing to expand to other areas.
Are there any specific care requirements for fat tailed sheep?
Fat tailed sheep require standard sheep care. They thrive in various environments. Animals that have been tail docked do put on more body fat, but that body fat does not have the special qualities of the tail fat.
